Cooking Dhabbakaya Pulihora with Sesame Seeds Spice Podi: A Flavourful Twist

Hello, food enthusiasts! Today, we’re diving into a delightful South Indian dish that will tantalize your taste buds with its unique blend of flavours—Dhabbakaya Pulihora, also known as Citron Rice. What sets this version apart is the addition of a homemade Sesame Seeds Spice Podi (powder), also known as Nuvvula Podi, which adds a nutty depth to the tangy rice. Follow along as we take you through each step to create this delicious meal in your own kitchen.

Ingredients:

To make Dhabbakaya Pulihora with Sesame Seeds Spice Podi, you’ll need:

  • 2 cups of brown rice
  • 1 medium-sized Dhabbakaya (Citron/Indian Grapefruit)
  •  Turmeric powder (1/4 teaspoon)
  • Chana Dal (1 tablespoon)
  • Urad Dal (1/2 tablespoon)
  • 2 Green chilies
  • 2 Dried Chilies
  • Peanuts (2 tablespoons)
  • Hing (1 teaspoon)
  • Salt to taste
  • Sesame Seeds Spice Podi (2-3 tablespoons)


Step-by-Step Instructions:

  • Wash the brown rice thoroughly and cook it with 4 cups of water until it’s fluffy but not too soft. Spread the cooked rice on a wide plate to cool.
  • Extract the juice from the Dhabbakaya by squeezing it. Set aside.
  • Heat oil in a pan and add mustard seeds. Once they start to splutter, add chana dal, urad dal, dried chilies, slit green chilies, peanuts, hing and curry leaves. Sauté for a couple of minutes.
  • Now add the cooked brown rice to the tadka and mix gently to avoid breaking the rice grains.
  • Pour in the Dhabbakaya juice and add turmeric powder. Cook for a few minutes until the raw smell of the Dhabbakaya disappears.
  • Add salt and mix well.
  • Sprinkle the Sesame Seeds Spice Podi over the rice and mix until the rice is well-coated with the Podi and the Dhabbakaya mixture.
